Our cooking expresses the genuinest umbrian culture and tradition, mixing tradition and innovation in a refined way. Our recipes fuse traditional flavours with modern ones, so as the hills the hotel stands on, at the cross of the different souls of Umbria.

The enviroment reflects this compound nature too: it is both refined and homely.


Our specialities include: strangozzi with funghi or tartufo (a kind of large spaghetti with mushrooms or tartuffe), maccheroncini alla norcina (a short pasta with cream and sausages), filetto (fillet) alla spolentina, arista with ginepro (roast beef with juniper).

The cellar

We have also a rich cellar with a wide range of labels. Obviously, Umbrian bottles belonging to the major wine areas stand out from the other ones: Montefalco, Torgiano, Orvieto, Colli del Trasimeno…
